Situated right across from the Kansas River, The Levee Café opened at the end of August, ready to welcome diners in North Lawrence with healthy fare. Seeing as it’s only a few steps away from the hiking and biking levee trail, Mary Holt and her husband, Evan, expected active residents to stop in for grab-and-go options – that’s part of how they developed their menu with kitchen manager Daniel Holloway.
And to their surprise, that hasn’t been the case. Customers who have made their way to their “quaint, little” café across the bridge don’t want to leave.
“We’re honestly doing more in-house stuff,” Holloway says. “We’re not doing quite as much to-go stuff as we had anticipated.”
